The DeFranco business started in 1926 by Philip and Teodora DeFranco. At that time the business was an Italian grocery store and butcher shop.

The DeFranco business started in 1926 by Philip and Teodora DeFranco. At that time the business was an Italian grocery store and butcher shop. After their retirement in 1976 they gave the business to their son Martin DeFranco who moved the shop from Roseto to West Bangor Road, Bangor, PA where the business is today. In 1989, Joseph took over the family business and continues to compliment the fine quality of meat which his family once sold. Today Joe has made the company grow into a seven day a week business with catering services available anytime.
At J. DeFranco and Daughters we specialize in Italian Cuisine, but also offer a variety of other menu selections. We offer butler service, buffet style, country style service and we also will simply deliver your selections and set up your event. All of our orders are custom and will be served or delivered anyway our customers prefer. We have catered events as small as a romantic dinner for two and as large as weddings with as many as 250 guests and more. No occasion is too big or too small.

Along with your catering needs, DeFranco’s Catering makes our own gourmet sausage. Fresh cut meats, imported and domestic cheeses and takeout orders are available. Like to cook true Italian dishes? Our Cucina has all the Italian products you need to cook up your favorite recipe in authentic Italian style.
Upon your request, we will also design Italian gift baskets creativity designed by Principessa Sirena. We would be delighted to customize a menu reflecting your own personal desires. Please allow us to make your occasions memorable. Our goal is to exceed your expectations and we look forward to opportunity to serve you.

Growing Up in the Butcher Shop:   Zucchini / Cocoaze

 

Ciao Amici,

 

     August 8th is “Sneak Some Zucchini onto Your Neighbor’s Porch Day.” No kidding; you know what I mean, it’s what do I do with all the zucchini from the garden?! When Grandmom worked in her garden she would harvest the small zucchini and use them for all types of dishes. One we enjoyed was a stew made by sautéing onions, garlic and celery in olive oil with some loose sausage and then adding the zucchini and tomatoes and basil; simple but oh so good with a hunk of Italian bread! She also picked the small zucchini flowers and stuffed them with mozzarella and then batter fried them for us to eat  before dinner so she wouldn’t  have to hear us ask “when are we going to eat?”

 

     When some of the zucchini got lost between the leaves and grew to large she would stuff them with a ground beef meatloaf mixture and top with sauce and grated Pecorino Romano cheese. Mom would grate them to make pancakes. Dad would slice them long on the slicer and grill them. Grandpop would sauté thin steak and add mushrooms, peppers, onions, zucchini and tomatoes and serve it over rice. Aunt Theresa would make zucchini bread. The recipes and ideas were endless .Every year Grandmom would say Josie next year we will plant less, but then when planting season came around she’d plant the same amount any way. She always asked my friends when they came over if they had a garden; if  the answer was no then they left with a recipe and a bag of zucchini.

 

Cucini lo schiaccia in ogni modo come, ma è schiaccia sempre

Cook squash anyway you like but it is always squash
